Xinzuo Lan Series: These Damascus knives would make a great addition to your collection. Each blade is made up of three major sections of steel. The primary core that serves as the cutting edge and two outer protective sections help prevent rust build up. Although you should still regularly clean your knives.

Blade Center Core: The core is made up of 14Cr14MoVNb Powdered Steel. This is high carbon steel with added, Chromium, Molybdenum, Cobalt, Vanadium and Manganese, allows for a very consistent edge that is hardened to 62-64 on the Rockwell scale. This hardness range is at the top end of the sweet spot of Damascus kitchen knives, which makes it harder, sharper, and more durable. Compared to 10Cr15CoMoV it delivers a sharper and longer lasting edge. While it has a Rockwell rating of 62–64 it is easier to sharpen and has the ability to achieve a sharper edge. It has a good balance with a golden angle of 15° Because of its ultra-sharp double edge it is suitable for both left and right hands.

It is important to note that Xinzuo & Hezhen both use expensive high quality vacuum heat treatment and cryogenic freezing. This is how they obtain this sweet spot of hardness and other qualities that make there's steels a cut above the competition.

Razor Sharp Blade: The core hardness of the blade is stable at 60 – ­62HRC which makes it harder, sharper, and more durable. It has a good balance with a golden angle of 15° Because of its ultra-sharp double edge it is suitable for both left and right hands.

72 layers Damascus Steel: The outer steel sections are made up of 36-layers each of SUS410 Stainless Steel. This makes dealing with corrosive fruits or vegetables easier than with a pure carbon steel blade. The Raindrop Damascus pattern adds an additional beautiful aesthetic layer to each knife.

Ergonomic Handle: Olive Wood is a slow growing tree that grows mainly in harsh conditions and dry soil. Due to these harsh growing conditions olive wood has some great properties for making knife handles. It is extremely dense and hard, wide variety of beautiful patterns, very stable wood against shrinking and expansion (only if you dry it for several years).  Processed Olivewood has a very smooth naturally shiny surface. Olivewood dries out more slowly than most other woods but occasionally needs a little olive oil or mineral oil, hand rubbed in. With a little maintenance your knives should last for decades. These handles also feature a flower design made from copper rivets that gives these handles an elegant finish. While being beautiful they are good for balance and a firm grip in your palm.
