Its flatter edge profile, generous blade height, and low tip favor push-cuts and straight-down chopping, delivering speedy, precise prep in tight spaces. Ideal for vegetables, boneless meats, and herbs when a full chef’s knife feels oversized.

This Santoku combines function and artistry with a Japanese-themed blade style. Each XINZUO blade features three layers of steel.
These layers consist of two outer layers made of SuS410 Stainless Damascus Steel and a single inner core of 10Cr15CoMoV. This construction blends properties without compromise: clad corrosion resistance and toughness on the outside with keen cutting performance at the core.
The 10Cr15CoMoV core provides a razor-ready primary edge. Heat-treated to 60–62 HRC on the Rockwell scale, it offers excellent edge retention while avoiding excessive brittleness—perfect for thin, controlled slices and rapid, repetitive chopping.
The SuS410 Stainless Damascus cladding functions as an anti-corrosion shield. It supports a beautiful stonewashed finish with a hammered look and a traditional hamon-style line—adding visual character without affecting cutting performance.
The handle pairs a Black Buffalo Horn section with rich Red Wood, echoing the blade’s light edge and stonewashed pattern for a cohesive, premium look.
Shaped after traditional Japanese profiles, the ergonomic handle promotes long-term comfort and secure grip for safer, more precise handling.
In use, the 5.5-inch Santoku excels at fine vegetable work (onions, carrots, peppers), herb mincing, clean protein slicing, and quick juliennes. The taller blade offers excellent knuckle clearance and board contact, while the compact length provides nimble control for everyday prep.
