A great Damascus knife set is essential for any kitchen and makes a great gift for yourself or other food-centric people. This is a beautiful 3 piece Damascus Kitchen knife set and features three of the more useful knives you can have in your kitchen.
The blades are made up of 10Cr15CoMoV Damascus Steel that was folded into 110 individual layers. This makes the blade one homogenous piece of steel, unlike other knives that have an individual blade core with a different steel around the core.
This allows for a more consistent heat treatment, especially when it is paired with the deep freeze/vacuum method. Using this method and steel combination, there is a much narrower spectrum for the blade’s hardness, ranging from 59-61 on the Rockwell scale.
A consistently hard edge helps ensure sharpness during cutting and the 59-61 range is in the sweet spot for edge durability and retention. This lessens the chances of the edge being too brittle and snapping or being too soft and rolling over. Blades in this range can be harder to sharpen, but not as hard as blades in the 65-67 range.
The Rose pattern Damascus Steel makes for a gorgeous blade aesthetic and is complemented by the North American Desert Ironwood handle. White Brass washers and Black G10 handle sections add some contrast between the blade and the main handle section.
Ergonomically speaking, the hand design is closer to a traditional Japanese kitchen knife but lacks the octagon pattern. The handle has a series of flat sections that help establish your grip on the knife. This allows for comfortable use for long periods.
The 8.5 inch Damascus Gyuto-style Chef Knife is a very versatile design. It has a long edge that helps with rocking cuts in addition to slicing, dicing, and chopping. The more centralized point allows you to pierce some harder materials or tough thin skinned vegetables (like tomatoes).
The 7 inch Damascus Nakiri is extremely useful for vegetable processing. Nakiri are specifically designed to work with vegetables allowing for dicing, mincing, and julienning everything from herbs up to squashes.
The 5 inch Damascus Utility knife will handle what the other knives in this set cannot. It has a similar blade to edge ratio as the Chef knife but in a smaller form. This makes it great for peeling, cutting, and other generalized kitchen tasks that don’t require a large knife.
