This Japanese Deba knife style is a great example of traditional Japanese cutlery. This is because of the overall blade and edge design.

Japanese blades are traditionally made with a single edge bevel. This makes them extremely good for cutting but only allows for them to be used with the hand that matches the beveled side, which is usually the right hand.

This style of knife features an additional concave grind on the “inner” side of the blade which makes the blade edge narrower and sharper. This helps with cutting, especially when you are dealing with fish. There is less resistance to the fine edge, creating clean, smooth cuts. These types of knives are usually associated with sushi or other fish processing tasks.

The blade is made from X8Cr14MoV Powder Steel and hardened to 56-60 on the Rockwell scale. This is the middle ground of edge hardness, but most of the cutting power comes from the edge design.

Additionally, the blade does not need to be extremely hard since these types of knives deal almost exclusively with fish which have less dense bones than red meats.

The handle is made from Ebony wood and has Brass and G10 accents to off-set the fine grained wood.
