This Japanese Deba knife style is a great example of traditional Japanese cutlery. This is because of the overall blade and edge design.
Japanese blades are traditionally made with a single edge bevel. This makes them extremely good for cutting but only allows for them to be used with the hand that matches the beveled side, which is usually the right hand.
This style of knife features an additional concave grind on the “inner” side of the blade which makes the blade edge narrower and sharper. This helps with cutting, especially when you are dealing with fish. There is less resistance to the fine edge, creating clean, smooth cuts.
