This 5 piece Damascus Chef knife set brings a beautiful Raindrop hammered Damascus design to the kitchen without compromising its performance. Each XINZOU blade features a total of 67 steel layers for better durability.
The core of the Full Tang blade is a 10Cr15CoMoV Steel. This is a high carbon steel which allows for a very sharp edge with the proper heat treating. This means the blade is hardened to a 58-62 HRC on the Rockwell scale. Any higher and the blade becomes too brittle, any lower and the edge can roll over too easily.
The 10Cr15CoMoV Steel core is the primary cutting edge of the blade and counts as one layer of steel. This allows for consistency along the entire length of the edge while creating a strong base for the additional steel layers to be added to.
The other 66 layers consist of two different pieces of stainless steel folded 33 times. These two pieces sandwich the core to produce the total 67 layers. The outer 66 layers of stainless steel provide corrosion resistance while being the base for the Tushime or “Hammered-Texture” design.
The handles are made of rosewood and feature steel and copper accents. This provides a more Western-style aesthetic that would fit in with most kitchen decor.
The handle ergonomics are also traditionally Western. They are contoured to provide comfort while using the blade for long periods of time. The base of the blade closest to the hand has been deburred and rounded to cause less pinching and finger discomfort.
The 8.2 inch Damascus Chef knife provides you with the primary cutting tool in the kitchen. It can be used to process vegetables and meat while lending itself to the rocking method of cutting. It can do a little of everything but doesn’t do everything well. One of those areas of weakness is cutting things like cucumbers or other high water content vegetables, which tend to stick easily to the blade.
The 7 inch Damascus Santoku knife is best used for chopping, mincing, and dicing. This makes it especially useful for dealing with vegetables, including those that give the Chef knife trouble. It can also be used on meat to produce nice thin slices.
The 5 inch Damascus Utility knife deals with smaller cutting tasks that larger blades might struggle with. Peeling fruit, deboning meat, mincing herbs, and other general tasks are all within the abilities of the Utility knife. They allow for better fine tuned control compared to their larger counterparts.
The 8 inch Damascus Carving knife, sometimes called a cleaving or slicing knife, is designed to be used on bone-in or large cuts of cooked meats. This is the blade you would use on whole chickens, roasts, hams, and legs of lamb. Carving knives allow for precise cuts for thin pieces of meat.
The 8.1 inch Damascus Bread knife allows you to easily cut your bread without crushing it. The serrated edge will power through the thick crush, but won’t compress the inner part of the loaf.
