This Paring/Fruit knife brings a beautiful, hammered Raindrop Damascus design to the kitchen without compromising its performance. Each XINZOU blade features a total of 67 steel layers for better durability.

The core of the blade is a 10Cr15CoMoV Steel. This is a high carbon steel which allows for a very sharp edge with the proper heat treating. This means the blade is hardened to a 58-62 HRC on the Rockwell scale. Any higher and the blade becomes too brittle, any lower and the edge can roll over too easily.

The 10Cr15CoMoV Steel core is the primary cutting edge Paring Knife of the blade and counts as one layer of steel. This allows for consistency along the entire length of the edge while creating a strong base for the additional steel layers to be added to.

The other 66 layers consist of two different pieces of stainless steel folded 33 times. These two pieces sandwich the core to produce the total 67 layers. The outer 66 layers of stainless steel provide corrosion resistance while being the base for the Tushime or “Hammered-Texture” design.

The handle is made of Rosewood and features steel and copper accents.damascus-utility-knife This provides a more Western-style aesthetic that would fit in with most kitchen decor.

The handle ergonomics are also traditionally Western. They are contoured to provide comfort while using the blade for long periods of time. The base of the blade closest to the hand has been deburred and rounded to cause less pinching and finger discomfort.

The 3.5 inch blade allows you to carefully cut and peel fruits better than standard Paring knives. The forward curved edge helps the blade to bite into tougher fruit skins more easily while emphasizing pulling style cuts.
